Regeneratively Farmed Apple Saucey Pork Chops Recipe

Regeneratively Farmed Apple Saucey Pork Chops Recipe
Our in-house nutrition expert Dr. Nicole Avena recreated a beloved classic recipe for our community with regeneratively farmed ingredients and our biodynamic apple sauce to offer the best possible experience in taste and purity: pork chops and apple sauce! For a new take on that delicious combo, look no further...
If this recipe tastes even better than the one you remember from growing up, it may be because repeated experiments for many years by people who grow and eat regeneratively farmed produce, and by biodynamic research establishments, confirms that it regularly produces high quality nutrient-rich foods that keep fresh longer, have greater vitality, and yes...even taste richer, juicier, sweeter, and all around better.
Here's why we love it:
Pork chops are considered to be a healthier meat when it comes to calories and fat. They deliver complete protein, B vitamins, and zinc.
This dish pairs our Apple + Cinnamon Sauce and spices with the pork, for an added boost of nutrition from fruit. As always, our apple sauce is never made with any added sugars, artificial colors, flavors, preservatives, and always grown without the use of chemical pesticides, fertilizers or herbicides!
The recipe includes pork chops from Cream Co Meats, the unconventional meat company and movement. Their mission is to even the playing field between mainstream and farm-direct distribution. They source meat and forge partnerships that value quality over quantity, flavor over convenience, and transparency at every step, including these Land to Market & EOV certified, pasture raised heritage Berkshire pork chops.

Regeneratively Farmed Apple Saucey Pork Chops Recipe
Makes 2 Servings
INGREDIENTS:
  • 1/2 tsp salt
  • ½ tsp fresh cracker black pepper
  • 2 Organic bone-in pork chops (about 1 lb total—we love the regeneratively farmed ones from CreamCo Meats)
  • 2 Tbsp olive oil
  • 2 x 4 oz containers of White Leaf Provisions 100% Regeneratively Farmed®, Apple+Cinnamon sauce
  • ½ tsp finely grated fresh ginger
  • 1/4 tsp allspice
  • Pinch ground clove
  • 2 handfuls organic arugula (or other salad green of your choice)
  • 1 small organic granny smith apple, cored and thinly sliced
  • 1 Tbsp Extra virgin olive oil

INSTRUCTIONS:

      1. Preheat oven to 350°F.
      2. Mix the salt and pepper together in a small bowl. Pat pork chops dry, season both sides of the pork chops.
      3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When oil is hot, add the pork chops and sear until a golden brown, approximately2 to 3 minutes per side.
      4. Transfer the pork chops to a baking dish and roast in oven until the internal temperature reaches 140°F, approximately 10 to 15 minutes, depending on thickness. Pork chops can easily overcook and dry out, so keep an eye on them.
      5. While the pork is roasting, in the same skillet used to sear the pork chops (don’t clean it), turn off heat, pour off excess fat. Add ginger, all spice and clove, let it heat for 30 seconds (stirring and scraping the bottom of the skillet with a wooden spoon). Add applesauce and stir everything together.
      6. Once pork is cooked, let it rest for 5-10 mins.
      7. To serve, dress the arugula with EVOO, mix with sliced apples, and place on plates. Top with the pork and serve with the applesauce on top or on the side.
